Oodles of zoodles

Anthea whipped up these zoodles cups for the team at work last week.

2 – 3 large Zucchini’s Spiralized (best investment you’ll make)

2 ripe (soft) Avocados

3 Cloves of garlic or 1 tsp of past

2 Tbsp. lemon juice

1 Cup of Basil or ½ cup dried basil

1/2 of currants

½ of pine nuts or nuts of choice

2 Tbsp. Lemmon/ herb seasoning

Cracked Black pepper, to taste


Step 1. In a Food processor blitz basil (if using fresh) and Garlic.

Step 2. Add avocados, Lemon, herb seasoning and blitz to a smooth paste

Step 3 Poor avocado paste over the spiralized zucchini (Zoodles) and add the currants, pepper, and pine nuts. Combine well.

Serve chilled and enjoy
